Stir-fried Baby Loofah with Ginger

Equipment

  • a pan with lid

Ingredients
  

  • 1 pcs baby loofah
  • 2 slices skinned ginger cut into thin shreds
  • 1 tbsp vegetatble oil
  • 1/4 cup warm water

Instructions
 

  • Remove skin of the baby loofah, only cut into 1~2cm slices just before cooking to avoid color change
  • Heat the pan with oil with medium high heat, and then add ginger shred, stir-fry until the aroma of ginger comes out (about 5 seconds)
  • Put in sliced baby loofah, stir-fry to allow oil to cover loofah slices (about 10 seconds)
  • Add water and cover with lid immediately, keep the medium high heat and cook for about 2 minutes or until the baby loofah becomes soft (DO NOT remove the lid repeatedly)
  • Turn off the heat and add salt to taste and serve
