Remove skin of the baby loofah, only cut into 1~2cm slices just before cooking to avoid color change
Heat the pan with oil with medium high heat, and then add ginger shred, stir-fry until the aroma of ginger comes out (about 5 seconds)
Put in sliced baby loofah, stir-fry to allow oil to cover loofah slices (about 10 seconds)
Add water and cover with lid immediately, keep the medium high heat and cook for about 2 minutes or until the baby loofah becomes soft (DO NOT remove the lid repeatedly)
